a little note. prepping the nursery.

The crib is set up once again. Kabir’s old crib and current bed will now be little baby boo2’s! Life’s little circles? πŸ™‚ Set it next to our bed, just like Kabir’s was before. 

Another few days and it’ll have a tiny little thing lying in it next to me…and we can’t wait. ❀️ 

Kabir for one has been praying every night to God to send his baby sister soon now. I mean it is already December!!!πŸ˜„ The first thing he had to say the morning of first December was…”Mamma!!! It’s December…has the baby come out?!” πŸ˜„πŸ˜πŸ˜πŸŽ„ This little one isn’t really in a hurry to face the world outside though! Unlike Kabir who was out the minute I turned full-term, this one is still laying low at end of week 38 now…😊

On weekends, when the house is quiet, we bake. (Provided we have all the ingredients at home!πŸ˜„) My sous chef being my  4 year old son. “Mamma can I …?” “I want to break the egg!” A happy mess of flour and sticky hands. Standing next to me on a stool pulled up to the work surface. 

From when he was barely able to walk, he’s been around me when I’m cooking in the kitchen. Then, I would hand him a few veggies in a pan and hand him a spatula. And he’d be happily cooking away πŸ™‚

Now he demands to be a part of the process! I’m going to do it…And so, I take his hands and I try and teach him to break an egg and mix and fold. His favourite part being licking off the leftover batter πŸ˜„ And then he waits patiently for the cake to get done! 

So finally here goes the recipe for my go to chocolate cake..made special by all these times that we’ve baked it together and then gorged it together! And ofcourse the…”mmmmmmmm…. Mamma it’s yummy!!” “You are the best!”
After experimenting with a few recipes, this one is pretty much fool proof. πŸ™‚ 

The Best Chocolate Cake

The Chocolate Cake combines cocoa and coffee to create a chocolate lover’s dream. A simple ganache recipe to top it makes it perfect!

This cake is dark, moist, rich and incredibly decadent! 
The Best Chocolate Cake
1 1/2 cups sugar (I like my cake less sweet, you can add more if you prefer)

1 3/4 cups all-purpose flour

3/4 cup unsweetened cocoa powder. Hershey’s or Cadburys work great. 

2 teaspoons baking soda

1 teaspoon baking powder

1 teaspoon sea-salt

2 eggs

1 cup buttermilk

1 cup strong black coffee (I use nespresso pods)

1/2 cup vegetable oil

2 teaspoons vanilla extract (purer the better)


Heat oven to 350Β°F. Grease and flour two 9-inch round baking pans or one 13x9x2-inch baking pan. (Or simply use a size you have, you can cut in half after its cool and frost as you desire.) Set aside.

In the bowl combine the sugar, flour, cocoa, baking soda, baking powder and salt. Sieve the cocoa and flour, so it has no lumps. Mix with a spoon, until dry ingredients are thoroughly combined.

In another bowl mix the eggs, buttermilk, coffee, oil and vanilla. Beat on medium speed for about two minutes; slowly add the dry ingredients and beat again. The batter will be thin.

Pour batter evenly into prepared pans.

Bake in preheated oven for 30 to 35 minutes for round pans, or until wooden toothpick inserted in center comes out clean.

Cool 10 minutes; remove from pans to wire racks. Cool completely.

Frost as desired. This cake pairs beautifully with a simple chocolate ganache. You can also do a chocolate butter cream frosting if you prefer!

Continuing the festive season dress up… for Dussehra this time. Celebrating the victory of goodnover evil dressed in white as family. Celebrated in different ways across India. Though I missed Kabir seeing the burning of the effigies which happens in the northern part of India. But we celebrated it with tikka and gifts, from Sapan’s side of the family. And it was wonderful…

a lil note. sleep…

From as far back as I can remember, Kabir has hated to sleep…at night! Even when he was just a few days old…he would be up till the wee hours of the morning, not crying but just wanting to play. While I just wanted to close my eyes and sleep!

When he became a few months older, making him sleep was a long drawn process of swaying him in our arms(me and Sapan would take turns!) and sing. Sometimes would take as long as an hour to finally make him sleep. When he turned a little older, he would demand the singing and patting..”Mamma…sing!” I had started to hate the rhyme “Old mac Donald” But he never tired!

After a while I was just tired of the singing and patting and more singing and patting…he thoroughly enjoying it…But Mamma was tired! Then I restored to just letting him be..”Mamma is sleeping!”….turn the light off and hope he will fall asleep soon too!

He would toss and turn..fall off the bed…climb on my face..pat me..try to wake me up..kiss me…sing a bit,…toss and turn some more…And then hallelujah…Finally sleep!!!

Now, he’s more than 3 years old, things haven’t changed all that much…he still hates going to sleep and does everything possible to delay bedtime.

Its mostly Mamma he wants to do ninni with…but then there are days …”Mamma…send daddy…you go to your room..” “I want to sleep with daddy!” A few minutes pass and then Mamma is summoned again. Then there are other days when daddy falls asleep in his room, trying to make our lil night owl sleep! He will then get up and come to my room…”Mamma …come..daddy is sleeping..I want to sleep with you!” It’s as frustrating as it is funny!!!

Maybe it’s our fault…we didn’t sleep train him well enough or maybe its genes..when did Mommy ever like sleeping early at night! But its a struggle nonetheless…

in pictures. the circus came to town…

And we made it happen. After a night at the hospital and Kabir with two teeth less(but spirit in tact!), we got back home and got started on the party planning.

And such a fun party it was…with Kabir the cutest ring master ever and everyone in a medley of stripes and polkas. Thank you everyone for being such sports! It was a fun day at Spectra Raintree…With clown noses and polka balloons. A tent with adorable circus animals for a cake, which tasted as good as it looked! Popcorn and fries and chocolate lolipops…star shaped cookies and chocolate cupcakes…It was a good way to remember Kabir turning three! ❀ ❀ ❀

Everyone says it and I’m no different…Time goes by so fast!!!

Kabir is three already and I don’t know where the last three years have gone…I remember the first day he came home with us, a fragile tiny lil thing. So so precious that he brought tears to our eyes every time we would see him, everytime he would smile in his sleep, every time he would grab our finger tightly in his tiny lil fist. So much has happened since and I wish I could remember every tiny detail, every milestone, every time he said and did anything for the first time…but the reality is that I can’t. God knows I try, with the crazy amount of pictures I take, of him and of us together(a lot of you would think I am obsessive), writing blogs posts and posting pix of Facebook.

Maybe I am doing this cos I know that time is really going fast…It isn’t just a cliche when people say he’s growing up so fast!!! Or even the annoying remark from old aunties…”kitna bad ho gaya hai…chotta sa tha jab tujhe dekha tha!!!“( How much you have grown…you were just a small baby when I last saw you!!!:D) The day isn’t far when Kabir will finish school and will be deciding on his options for college. It seems so far away yet I know that when the day does come, I will be looking back and wondering where did the time go? And seeing him go away far somewhere to pursue his dream, a piece of me will go with him. I know I am being a little melodramatic but yet…its heartbreaking to think of it. For now, I’ll just kiss him a lot, hug him tight, tell him I love him often and loud. Read him stories, kiss his bruises away, teach him, scold him and love him with all my heart. So that when the day comes for him to move away he’ll know how much I love him no matter how far apart we may be….

So Kabir can never get enough of “I want to go outside!” …From playing peek a boo sitting on the bed, now he wants to play hide and seek in the basement. “Let’s go Mamma…let’s go to the basement!”. Hiding behind the same pillar everyday and waiting for me to come get him. Both of us chasing after each other, around it. And he giggling and screaming away in delight. It never gets boring!

And then there is his “mountain”!!! So the back gate of the apartment complex is permanently closed. Leaving the inclined exit from the basement leading to it free and safe for play. That is Kabir’s very own “mountain”! It’s where he races his monster truck and digger! Rolls the security guards stick on, watching it roll down…again and again. And lies on his back with his Mamma staring at the moon and stars. It’s our private little haven.

It’s become a ritual now, after I get back from work. Before or after his dinner, we head out for our walk around the complex. He promptly puts his crocs on, and then starts tugging away at my home slippers to hurry up! Playing hide n seek, running up and down the mountain. And playing with shadows making dinosaurs roar and birds fly!

Can’t thank you enough #mysweetboy for showing me time and again the little joys of life. I love you. ❀
